Oca (Oxalis tuberosa). It is a root vegetable from the Andes. It is like a potato, but with a lot more flavour. The flavour combines elements of sweet and acid so – much like a tomato – can be very rich, bold and complex. Use them as you would other small potatoes; they can be boiled, roasted, baked, mashed or fried.
